Don Buchanan, an "outrageous" sport fisherman, has been smoking his "catch" for more than 25 years. Friends and acquaintances were delighted with the unique taste and soon it became a favorite treat. Only fresh salmon, raised in icy cold Northwest waters is used to insure consistent quality. Our fish is filleted and completely boned by hand, then marinated in a brine of Northwest Cascade Mountain honey, brown sugar, salt, and special seasonings. It is then smoked with traditional native alder wood. Out unique brine and the aromatic smoke of the Pacific Northwest alder produces a moist, succulent smoked salmon with a slightly sweet and lightly salty flavor. This ready-to-serve hot-smoked salmon is among the finest in the world. One taste and you'll be "hooked".
